Every time you open someone's Story from a logged-in Instagram account, your username is added to that Story's viewer list. The account owner can tap that list and see exactly who watched. There's no way to hide from it inside the app.
Viewing anonymously means opening the same public Story without a logged-in account behind it. No account means no identity for Instagram to attach to the view, so nothing appears on the owner's side. That's the entire mechanism — it isn't a trick, and it isn't a hack.

How to Watch Instagram Stories Anonymously
Get the username or the profile link
You only need one of two things: the account's exact username, or a direct link to its profile. Usernames are unique and contain no spaces, so they're far more reliable than display names — people change display names often, and two accounts can look almost identical. Copying the profile link straight out of your browser or the Instagram app is the safest option of all, because the tool reads the username out of the URL for you. Some sites imply they can get around a private account. They can't, and neither can we — a private Story is served only to approved followers who are logged in, and no external tool has access to it. Anything claiming otherwise is either showing you cached public content and calling it private, or collecting your login. If an account is private, the only legitimate way to view Instagram Stories anonymously from it is to be approved as a follower first.
